The people of Celliwig very much love their aesthetic, so they'll be seeking to make things similar to how Celliwig used to be, in particular experimenting with molecular gastronomy in Camelot to try to get the flavors of home. Celliwig's primary magical strengths are in light and dark magic, so the majority of their mages fall under that category, but there are a few in between (including Gwion and her sister seers.)
Lestari is a little more laid back and are fans of altered states of mind, whether that be magically or otherwise. The great wizard Zanacks seems to have perished in Lestari, or at the very least isn't among the refugees, so anything to calm their nerves will be a welcome addition. Lestari was an underground civilization, so their diet was a little more heavy on root vegetables, foods that are easy to preserve, junk food, and meat. They also like video games and inventing, as Lestari's most significant mages are all cognitive and technomancers.
You're totally welcome to have your characters find out about anything you're asking here by talking to Lestari and Celliwig citizens, including the Death Ball.
Refugees make their own candles but are happy to teach PC cognitive mages how to infuse their magic into the candles.
